According to Alton Brown from the Food Network you need to be adding salt to your coffee, right from the ground state.
Alton says if you add salt it actually takes the bitterness out of the brew and the reason is because research shows that salt is better at nuetralizing bitterness than sugar is. It also smooths out the taste of the tank stored water in your coffee machine.
